Vanilla Layer Celebration Cake

A big thank you from me goes to the lovely Sam at Sams Kitchen for the inspiration for this cake, when I was at a complete loss for what to make for my Dad’s 60th birthday Sam came to the rescue. Now Dad doesn’t eat cake but we all do! I can honestly say I have never ever seen a cake of mine disappear so quickly! I was dishing up, misjudged numbers and there was none left for me. Fortunately Mr Clemens stepped up and shared his – there’d have been trouble if not 😉
So if you’re looking for a cake to impress that doesn’t need a ton of decorating then this Vanilla Layer Celebration cake is just the recipe you need.
Ingredients:
Cake
375g butter, softened
375g caster sugar
1 tsp vanilla extract/vanilla bean paste or the seeds from 1 vanilla pod
6 eggs, large
375g self raising flour
Approx 1/2 jar of strawberry or raspberry jam
Buttercream
200g butter, softened
400g icing sugar, sifted
1 tsp vanilla bean paste or the seeds scraped from 1 vanilla pod
1-2 tbsps hot water
Ganache
200ml double cream
125g dark chocolate
To Decorate
A selection of chocolate e.g. Crunchie bars, Mistrels, Chocolate Buttons and chocolate curls.
You will also need 2 x 8″ cake cards

Inspired to Bake? #GBBO
October 9th, 2014Wow what a final on #GBBO last night! Congratulations Nancy!!
All the finalists did so brilliantly well they would all have made worthy winners.

Chocolate Amaretto Schichttorte & Cashew Baklava
October 3rd, 2014It’s not often I get to bake something a little bit different from the norm but these two #StorkTwist recipes delivered it in bucket loads.
First up a Chocolate Amaretto Schichttorte – the method looks a little daunting, baked in layers under the grill but I have to say I loved baking it and loved eating it too! (only 12 layers for me though – tsk!)
And a Honey Roast Cashew and Sesame Baklava – with the option of your own homemade Filo pastry – if you’re in the for the quick option then shopbought is far easier (and I promise I won’t tell Paul & Mary)

It seems I have recipes all over the place at the moment, but I know this is one you’re going to enjoy. I’ve joined Bosch in their #lovemyfridge campaign and shared with them my favourite leftover recipes.
Sunday roasts are a regular occurrence for my family, a trait I’ve inherited from my Mum (I still can’t do them as well as Mum can!) Time being short during the week for hearty family meals I always try and plan to stretch that roast out into a meal for the week. My recipe for Honey-Mustard Chicken Pie is a great weekend extender – using up leftovers, kept tasty and fresh in a great fridge!
