So you’ve had a chance for the post Christmas dieting, abstinence and generally being good and I’ve been getting on with all sorts of exciting projects lined up for 2014 – I’m hoping it’s going to be a great year for us all.
Well, it’s back to the baking here and kicking off 2014’s recipes is a really rather lovely one….Banoffee Pie! Recipe in the next post.

Day 12 – Potato Skins – Festive Style!
December 12th, 2013Festive Potato Skins are the last recipe in my 12 Days run. Ideal for feeding hungry children, adding to your buffet table or for using up any Christmas dinner leftovers. These can be done easily with smaller potatoes too if you have lots to feed.
Ingredients:
4 large baking potatoes
175g cooked turkey, or chicken
75g cooked sausagemeat stuffing
50g cooked pancetta or smoky bacon, even pigs in blankets if they haven’t all been eaten!
20g melted butter

Day 11 – Meringue Mince Pies

This idea came from Shirley via facebook and I’m so pleased it did – a great twist on the traditional mince pie!

Day 10 – Brandy Butter
December 10th, 2013Stop, hold on, before you switch off thinking you’re not keen on brandy butter! I wasn’t either, until I made my own! Wow what a revelation I can’t believe I’ve been missing out all this time!
Two versions from me, a brandy butter and a Baileys butter too. Stored in the freezer in individual portions so there’s no waste either.
If you love a good spread of butter on your toast, teacakes or slice of fruit cake then this is definitely right up your street!
Ingredients:
Brandy Butter
125g butter, salted
125g icing sugar
zest of 1/2 orange or 1 clementine
1 tsp vanilla bean paste or seeds scraped from 1/2 pod
3 tbsps of brandy

Day 9 – Toffee Pecan Roulade
December 9th, 2013Who loves a Toffee Pecan Meringue Roulade at Christmas?
This is the perfect dessert to make ahead and store in the freezer. Just right for whipping out, defrosting and serving up in a flash.

2 tsps cornflour
225g light muscovado sugar

Day 8 – Choc Cherry Panettone
December 8th, 2013Dark Chocolate and Cherry Panettone for my Day 8 recipe – made in a cupcake/muffin tin.
Make them now and stash them in the freezer! This one’s a long slow one, very little hands on to be done and plenty of get on with other stuff time – now that’s my kind of recipe!
Makes 12.

Day 7 – Christmas Quiche
December 7th, 2013Here’s a special something for your buffet table this Christmas – a thoroughly festive Christmas Quiche! Spinach, feta, pine nuts and juicy cranberries made with Wright’s Sungold pastry flour a slice of this is just delicious!
Ingredients:
Pastry
225g Wright’s Sungold Pastry Flour
100g butter, cold diced
1 egg, large
1-3tbps cold water
Filling
100g spinach
80g feta cheese
1 tbsp pine nuts
2 tbsps fresh cranberries
120ml milk
120ml double cream
2 eggs, large
2 egg yolks
1 tbsp Dijon mustard

Day 6 – Honey Roast Nuts
December 6th, 2013Fancy something different to give as a gift? These honey roast nuts are just the job. Sorry to my friends and family, I’ve been munching on these myself – oops!
Ingredients:
300g peanuts
150g cashew nuts
90g pecans
80g honey
50g light muscovado sugar
30g butter
1 tsp vanilla extract
1 tsp salt
25g caster sugar
Plus:
1 tsp salt
20g caster sugar

Day 5 – Chocolate Reindeer
December 5th, 2013I have had so much fun making a herd of reindeer for Day 5 – I very much hope you’ll love these cheeky chappies as much as I do!
