    Strawberry Meringue Slices

    The summer hols have me well and truly in a sunshine baking mood!  These slices are not for the faint hearted – packing a truly sweet treat – shortbread, strawberry meringue and white chocolate!

    Ingredients:

    Shortbread Base

    125g butter, softened

    50g caster sugar

    175g plain flour

     

    4 tablespoons of strawberry jam

    50g meringues

    100g white chocolate

    Easy Children’s Birthday Cakes

    Is making your children’s birthday cakes a full on event?

    New research from Stork shows that nearly 50% of parents spend two and a half working days baking their kid’s birthday cake, with one in 10 baking well after midnight!  

      Crikey me! To save you some trouble and burning the midnight oil I’ve come up with three easy peasy children’s birthday cakes for Bake with Stork that can be done in just the shortest of time, based on the simplest of ideas and shapes, without a ton of stress and that little people will definitely love.

    Brownies & Ice Cream Cones

    With an alleged heatwave on the way  it’s time to share my Brownies and Ice Cream Cones with you.  A waffle icecream cone with chocolate brownie baked inside, topped with a good scoop of vanilla ice cream!  It’s also my contribution to Waitrose’s #TasteOfSummer campaign.

    Princess Castle Cake and more…

    My kitchen is still a building site and the oven is now very much out of action!  I promise I’ll share some pictures of my much improved gigantic space soon but in the meantime here are a couple more projects for Bake with Stork that might just take your fancy…

    Edible Flowers & Flowerpot Cake

    I’ve been busy working on some more projects for Stork and I think you might just like this one!

    If you’ve loved Chelsea Flower Show and are inspired to get a little green fingered then some edible flowers and a stunner of a flowerpot cake could be just the project you need.

    As always you can follow my step by step photos and instructions and create yourself a cake flowerpot and pipe some simple flowers – a flowerpot of floral loveliness!

    Chorizo and New Potato Tarts

    DSC01717Something a little bit summery for you on the blog today, Chorizo & New Potato tarts.  Choose a good tasty Chorizo for these tarts and you’re onto a sure fire winner!

    Ingredients:

    1 x qty Savoury shortcrust pastry, recipe here

    Filling

    1 x red onion, diced

    1 clove of garlic, finely chopped or grated.

    1 small red chilli (optional)

    Salt and pepper

    100g sliced chorizo

    150g new potatoes, boiled

    60ml double cream

    60ml milk

    1 egg yolk

    1 egg, large

    Salt and pepper

    Makes: 6 small or 1 x 8 or 9” Tart

    Make up the pastry following the directions here, wrap it in clingfilm and let it rest in the fridge for 30 minutes. Read the rest of this entry “

    Granola Bars

    Something lovely again for you this Friday, Granola Bars – a recipe pinched from a fabulous friend and I’ve only fiddled a little bit with it – honest!

    Packed with seeds and fruits these are just delicious.  Please turn a blind eye to the butter and sugar and enjoy!

    Ingredients:

    190g butter

    150g soft light brown sugar

    110g golden syrup

    300g rolled oats

    45g cornflakes

    75g dried apricots, chopped
