Caramel Cake
Caramel Cake with Crushed Daim Bars
Ingredients:
Cake
300g butter
180g dark muscovado sugar
1/2 397g tin Carnation Caramel (Dulche de Leche)
6 eggs
320g self raising flour
Filling
125g butter
250g Icing Sugar
1 spoonful of Caramel (from the tin)
Icing
250g Icing Sugar
1 spoonful of Caramel (from the tin)
10ml water
2 Daim Bars

Sometimes you just can’t beat the old favourites – Marble Cake is exactly that, it’s not complicated or difficult just delicious!
Ingredients:
200g butter
200g caster sugar
150g self raising flour
50g plain flour
4 eggs
3 tbsp cocoa powder
Preheat the oven to 180c/160cFan/350F/Gas Mark 4
Grease and line an 8″ round cake tin.

I have had many requests for this recipe but haven’t managed to do a step by step for you but never fear the recipe is printed in the current issue of BBC Good Food Magazine and is also online on the BBC (how cool is that!)
Rosie Fairycakes with Crystallised Rose Petals
Beautiful rose flavoured fairycakes hiding a Turkish delight jewel and topped with purely gorgeous crystallised rose petals.
These cakes were inspired by a lovely meal out in London with friends at a Turkish Restaurant. The rosewater you can get in most baking sections in the larger supermarkets but I got this bargain big bottle from the Polish section in Tescos for less than £1.
Chocolate & Pomegranate Cupcakes
These are a delicious new take on the chocolate cupcake.
The addition of pomegranate adds a subtle fruitiness and gives the chocolate a new edge. Star of the show are the pomegranate seeds sprinkled on the tops glistening like jewels. (I’m a sucker for glitter!)

85g Plain Flour
200g Frozen Black Forest Fruit Berries (Sainsburys)
You will need a baking tray with deep sides approx.

This pan happened to end up in my collection in one of those shopping moments when all sensible rationale flies out of the window. Lured by cute monkeyness and sheer curiosity the pan found its way into my shopping basket.
Blackberry Glazed Angel Food Cake
Light, Sweet and Virtually Fat Free – In my house WE LOVE THIS CAKE. In fact as I write it’s all gone!
Ingredients:
9 Egg Whites
120g Plain Flour
250g Caster Sugar
1 1/2 tsp Cream of Tartar
1 1/2 tsp Vanilla Extract
For the glaze:
350g Icing Sugar
250g Blackberries
Sprigs of mint to decorate
Preheat oven to 170c/160c Fan/325F/Gas Mark 3.
