Day 11 – Cheese Oatcake Crackers
A lovely little addition to the Christmas Cheeseboard for Day 11 of TPW 12 Days of Christmas
Ingredients:
120g oatbran (cereal aisle in the supermarket)
160g porridge oats
salt and black pepper
85g flavoursome Cheshire cheese
50ml olive oil
100ml hot water
Cheese & Tomato Chutney Tartlets
These Cheese & Chutney Tartlets are definitely moreish (I’ve scoffed half a dozen sitting writing this post) and they’re perfect with Sweet Chilli & Tomato Chutney. Homemade chutney isn’t compulsory though just use your favourite.
Ingredients:
1 x quantity of savoury shortcrust pastry recipe here
1 x small jar of Tomato Chutney recipe here
100g grated mature cheddar
60ml milk
60ml double cream
1 egg, large
1 egg yolk
salt and pepper
Grease the recesses of a 12 hole shallow bun tin.
Perfect Cream Cheese Frosting
This is the perfect recipe for cream cheese frosting. It’s pipeable, spreadable and will set just nicely for you without running all over the place, but there are a few things to remember.
Day 4 – Parmesan and Poppy Seed Crackers
On the fourth day of Christmas The Pink Whisk sent to me…..Parmesan and Poppy Seed Crackers – perfect for your cheeseboard!
Makes 24 thick crackers.
Ingredients:
300g plain flour
2tsp baking powder
1 tbsp sugar
1/2 tsp onion salt
115g butter
2 tbsps vegetable/sunflower oil
2 tbsps poppy seeds
130ml water
30g parmesan cheese
Begin by adding the flour, baking powder, sugar and onion salt to the bowl of a food processor.
Ham & Leek Gougere
Sounds fancy, it’s not (you know me better!) This makes a great family tea, a change from pie and casserole but still with that give you a great big hug hearty winter meal! This is Mum’s recipe, but I’ve fidgeted about with it of course – here’s hoping she doesn’t mind too much.
Sunkissed Tomato & Parmesan Rolls
Sunkissed Tomato & Parmesan Rolls – a little taste of sunshine!
Makes 6 Rolls
Ingredients:
450g strong plain white flour1 tsp salt1 tsp caster sugar1 tsp dried yeast280ml water, tepid1tbsp oil from the jar of tomatoes100g sunkissed tomatoes40g grated parmesan
Method
In a large bowl combine the flour, salt, sugar.
Roasted Red Pepper Tart
So it finally feels like spring has sprung and with Mother’s Day just around the corner this Roasted Red Pepper Tart is perfect for a special lunch!
Makes 1 x 9” Tart or 4 x 4” Tartlets
Ingredients:
Pastry225g plain flour, sifted50g lard50g butter, salted1 egg yolk2-3 tbsp cold water
Filling1 x jar of whole Roasted Red Peppers (320g drained weight)80g spinach1 tbsp olive oil120ml milk120ml double cream2 egg yolks2 eggsSalt and pepper60g Lancashire or mature cheddar cheese
Method
To make the pastry rub the lard and butter into the flour in a large bowl until the mixture resembles fine breadcrumbs.
Cheese & Onion Bread
There’s nothing more my boys love than a steaming bowl of hearty homemade soup with a good helping of bread for dipping in it. This cheese and onion bread is delicious dunked, on it’s own or made into a butty!
Ingredients:
1 onion, diced
25g butter (1 knob)
450g strong white plain flour
200g mature cheese, grated
1tsp salt
1tsp caster sugar
1tsp fast acting dried yeast
200ml milk
100ml water
25g butter, melted
Sautee the chopped onion gently in the pan with the butter until soft.
Minced Beef Pie with Cheesy Crust
This is such a great family pie and was also a hit on The Great British Bake Off – no soggy bottoms here!
Ingredients:
Pastry225g plain flour75g butter, cold diced75g Lancashire cheese1 egg yolk4-6tbsp cold water
Filling250g minced beef2 carrots, diced1 stick of celery, diced1 onion, dicedSplash of ale2tbsp tomato puree2tbsp Worcestershire sauce
1 egg beaten for egg wash
