Chocolate Muffins (and the perfect chocolate cake recipe)
So here is my recipe for huge chocolate muffins with a surprise chocolate sauce filling – you know the kind you can buy in coffee shops and bakery chains up and down the country. They are twice the size of your average cupcake but take some beating!
Choc Cherry Cake Pops & Kenco Millicano
I was lucky enough recently to be invited along to the launch of a fab new instant coffee – Kenco Millicano – Kenco’s first ever Wholebean Instant coffee! It’s the closest thing to ‘proper’ coffee you’ll get in an instant. Available in supermarkets from the 1st March 2011.
Baileys & Choc Chip Scones
This lovely idea came from a chance discussion on Facebook and is courtesy of my gorgeous friend Kate. They work brilliantly and if you’re a Baileys lover then these are for you! – Thanks Kate xx
Ingredients:
225g self raising flour
Pinch of salt
50g butter
25g caster sugar
120ml Baileys or other cream liquer
75g milk chocolate chips
2 tbsps milk to glaze
To serve:
Whipped Cream
Chocolate Spread
Preheat the oven to 220c/200c Fan/425F/Gas Mark 7.
Chocolate Orange Macaroons
Another fab flavour Mac for you – Chocolate Orange they’re not Terry’s they’re mine!
You will need:
1 batch of Macaroons dyed bright orange (recipe here)
Dust them lightly with cocoa powder as soon as they have been piped.
Orange Ganache
100g milk chocolate
100ml double cream
1 tsp orange extract
Make up the ganache by placing the cream in a pan.
Raspberry & White Chocolate Macaroons
As promised here’s an ultimately delicious Macaroon – Raspberry and White Chocolate.
You will need:
1 batch of Macaroons coloured a deep raspberry pink (recipe here)
White Chocolate Buttercream
75g butter, softened
150g icing sugar
50g good quality white chocolate
1 tbsp double cream
Raspberry Filling
300g raspberries (fresh or frozen)
100g caster sugar
2 tbsp water
1tbsp cornflour
Make up the white chocolate buttercream.

Chocolate and coconut were made to go together, add in some marshmallow and it’s heaven in a snowball!
Ingredients:-
Cakes
200ml milk
2 tsp malt vinegar
75g dessicated coconut
140g butter, softened
200g caster sugar
1 1/2 tsp vanilla extract
2 eggs
55g self raising flour
165g plain flour
3/4 tsp bicarbonate of soda
60g cocoa powder
Marshmallow
225g caster sugar
85ml water
1 x 7g sachet of gelatine
50ml water
Topping
20g dessicated coconut
50g plain chocolate to drizzle
Preheat the oven to 160c Fan/180c/ Gas Mark 4.
Chocolate and Lime Tart
Inspired by sweeties, I love chocolate limes I thought I’d turn this into a sweet tart – it was a success, I think the OH ate half this in one go!
Ingredients:Sweet Pastry175g plain flour120g butter, cold diced30g caster sugar1 large egg, beaten
Lime Filling120ml lime juice240ml water270g caster sugar50g cornflour3 egg yolks2 tbsp butter
Grated zest of one limeGreen food colouring if desired.

Chocolate & Banana Loaf Cake
Another of my really simple cakes – it’s definitely a firm favourite in our house and uses up the bananas I bought because the children begged for them and they’ve gone brown in the fruit bowl because no-one’s eaten them.
Ingredients:
250g plain flour
2tsp baking powder
125g butter
225g dark muscovado sugar
5 bananas – super ripe
1tsp vanilla extract
2 large eggs
200g dark chocolate chips
Preheat the oven to 180c/160c Fan/Gas Mark 4.
