Lemon & Blueberry Scone Slices

Ingredients:

330g self raising flour

75g butter, cold diced

40g caster sugar

Zest of 1 lemon

120g blueberries, frozen

180ml milk

 

Juice of 1 lemon

2 heaped tablespoons of icing sugar

Makes:  6 large scone slices

The blueberries in this recipe are best frozen, which stops them completely disintegrating and bleeding too much on baking,  buy them fresh and then simply pop them in the freezer before you get going, you don’t need to buy them ready frozen.

10 – Treacle Spiced Loaf Cakes

Little treacle loaf cakes with punchy Christmas Spice, a quick and easy recipe to share with your friends and family.  They’re egg free too, don’t worry I haven’t missed them out of the ingredients list.

90g butter, softened

90g caster sugar

250g plain flour

¾ tsp baking powder

¾ tsp bicarbonate of soda

1 tsp mixed cake spice

1 tsp cinnamon

½ tsp ground cloves

Zest of ½ orange

110g treacle

110g golden syrup

200ml boiling water

Flaky Pastry Toffee Apple Pie

 A winter warmer if ever there was one!  Toffee Apple taste without the risk of losing a tooth 😉  Flaky pastry has to be top of my list just at the moment buttery flaky and quick and easy to do too – try it I’m sure you’ll be converted just like me Xx

Ingredients:

1 x qty Flaky Pastry – recipe here

475g apples

150g butter

75g light muscovado sugar

1 egg for egg wash

caster sugar for sprinkling

Naan Bread – Plain plus Garlic & Coriander

I love making these when I have the time,  you can’t beat curry night in our house with homemade Naan bread.

There’s 2 options for you with a recipe for plain or Garlic and Coriander Naan Bread

Ingredients:

300g strong white bread flour

1 tsp salt

2 tsp fast action yeast

165ml milk (170g)

4 tbsps natural yoghurt (60g)

1 tbsp vegetable or sunflower oil

1/2 to 1 tsp kalonji seeds (onion/nigella seeds)

Plus 25g melted butter

Garlic & Coriander Naan

1 clove of garlic, crushed

2 tbsps chopped fresh coriander

Place all the dry ingredients into a large mixing bowl.

Glaze Icing for Flooding and Decorating

Just recently I’ve been using glaze icing to decorate and flood biscuits instead of the usual royal icing,  not only do I find it a million times easier to work with, it gives you great results and tastes fab too!

I know I’m going to be working on a fair few projects in the coming months using this glaze so here’s the recipe.
