How to Make Savoury Shortcrust Pastry
A lot of people have a bit of a block when it comes to pastry, some folks are adamant that they just can’t make it. It is in fact one of the simplest things to make and the addition of an egg yolk not only gives the pastry a great taste it somehow magically makes the pastry more flexible, less likely to split and crack and prevents it from being overworked as quickly.
Sweet Potato Pie
Okay it’s not a pie, it’s a tart…. but I think sweet potato pie sounds better!
A thoroughly different use for Sweet Potato and a tough one to describe, think of the filling as a cross between cheesecake and a custard tart.
Day 11 – Pork Pies with Cranberry Jelly

(She’s nearly collapsed in a heap getting all these recipes done – but the taste testing has been fun!)
The cranberry jelly in these pies makes for something really lovely – a sweetish jelly with the tasty pork filling and crunchy crisp hot water crust pastry.
Day 9 – Mini Beef Empanadas
On the ninth day of Christmas The Pink Whisk sent to me…..Mini Beef Empanadas
Makes 20 Small or 8 full size.
Ingredients:
Pastry
225g plain flour
1/2 tsp turmeric
1 tsp baking powder
50g butter
50g lard
Cold water to combine (70-90ml)
Filling
225g lean minced beef
1 onion, diced
2tbps oil
1/2 tsp cumin
1 tsp chilli powder
1/2 tsp turmeric
100ml beef stock
1 egg, beaten for glaze
Begin by making the pastry.
Day 8 – Baileys Pastry Mince Pies

I didn’t think you could beat mince pies made with zesty pastry (recipe here) turns out you can – with Baileys Pastry!
Day 7 – Pastry Spoons
On the seventh day of Christmas The Pink Whisk sent to me…..Pastry Spoons.
These make perfect canapes for your dinner parties or posh do’s – well I think they are, if I was a posh girl hosting a score of parties then this is what I’d go for.
Day 4 – Parmesan and Poppy Seed Crackers
On the fourth day of Christmas The Pink Whisk sent to me…..Parmesan and Poppy Seed Crackers – perfect for your cheeseboard!
Makes 24 thick crackers.
Ingredients:
300g plain flour
2tsp baking powder
1 tbsp sugar
1/2 tsp onion salt
115g butter
2 tbsps vegetable/sunflower oil
2 tbsps poppy seeds
130ml water
30g parmesan cheese
Begin by adding the flour, baking powder, sugar and onion salt to the bowl of a food processor.
Toffee Apple Tart
So to kick off The Pink Whisk October Challenge here’s my apple recipe for Toffee Apple Tart.
Ingredients:
Pastry
150g plain flour
65g butter, cold
25g caster sugar
1 tsp vanilla bean paste
enough water to combine (2 -3 tablespoons)
Filling
70g fresh breadcrumbs (about 2 slices of fresh bread, blitzed)
1/2 tsp cinnamon
2-3 large apples
(unpeeled my apples weigh about 550g, you will need enough apple that when peeled, cored and diced will cover the top of your tart case.
