Day 4 – Cranberry & Pistachio Snow Bites

How could you resist these for Day 4?  A super easy recipe that’s really quick to throw together and of course they are just fab for gifts.

They’re not a fudge, but not a fondant either…imagine somewhere in between.  Whatever the weather they are blooming lovely!

Ingredients:

115g butter

400g caster sugar

150ml soured cream

300g white chocolate, melted

200g marshmallows (white)

1 tsp vanilla extract

125g dried cranberries

Day 2 – Christmas Pudding Chocolate Covered Oreos

Mmmmm!  Christmas pudding shaped Chocolate Covered Oreos!

Now you can get specific chocolate oreo moulds that are a good deal smaller than the way I’m doing these.  I don’t have one, my kitchen is bursting with equipment and I may be the recipient of an angry husband should any more essential bits and pieces make their way into our house!

They’ve turned out just perfectly and are just right to wrap up as a gifts.

Using up Egg Yolks

 and how to make custard….

Thought I’d post this useful table I put together some time ago,   you know how it is…you’re baking something, you’ve 7 random egg yolks left over.

Of course there’s lots of things you can do with egg yolks but my all time favourite has to be a great big panful of custard –  but then you have to get the calculator out, or engage the brain cells with pen and paper calculations.  Well no more – here’s my handy table for whipping up a jugful of custard without taxing any brain cells!

My New Kitchen Helper & Win Yourself One Too!

So not my usual kind of post, in fact I hardly ever review things but I’m making an exception for this one.  Why?  Because I’m seriously impressed and it’s turned into a real boost in my kitchen plus I’m treating one of you to one too!

No, it’s not a new tin, a new ingredient (or a washer upper – although one of those would be HIGHLY useful!)  It’s a Google Nexus 7 by Asus.

Yes, we have an iPad in our house, do I ever know where it is?  Well yes, I do, it’s attached to a child.  Or it’s stashed in one of their bedrooms battery flat as a pancake.

My kitchen is of the tidgey tiny variety so moving my laptop in there is just a no go, there’s just no room to bake when I’ve tried it.  So, instead I dodge between the kitchen and the dining room where said laptop resides or I peer into the screen of my phone through clouds of icing sugar which is equally troublesome.
